This contest was the first since the passing of the founder of Bocuse d’Or, Paul Bocuse. An emotional tribute marked the presentation of the awards.

11 teams, composed of the candidates, a commis and a coach, had precisely 5 hours and 35 minutes to prepare a platter composition (which needed to feature a suckling pig and two types of berries) and a plated dish (using a whole salmon and crab) to a panel of judges.

Chef Trevor Richie was joined by Jenna Reich (commis) and James Olberg (coach) representing Canada as he presented his elaborate suckling platter composition that displayed variations of suckling pig with authentic Canadian flavors.  Across the platter and the plated dish challenge, the chef represented the Canadian heritage by utilizing ingredients such as wild chaga mushrooms, dates, cranberry chutney and maple leaves, integrating them with French cooking styles, in the true spirit of Bocuse d’Or.
