From 25 to 27 September Identità Golose 2021 was held in Milano, This is the 16th edition of the international congress for haute cuisine and patisserie.
This great Italian event sponsored by S.Pellegrino has addressed a very topical issue of great importance to the world of gastronomy: “Building a new future: work”. It was an opportunity to publicize the tangible commitment of S.Pellegrino towards the future of fine dining and the growth of new talents. In particular, to recount the story of the S.Pellegrino Young Chef Academy, the community that brings together mentors and young chefs with the intent to “build a new future” and offer growth opportunities to the emerging protagonists of international gastronomy.
An installation to recount the S.Pellegrino Young Chef Academy
To present their own vision, S.Pellegrino welcomed the visitors of Identità Golose 2021 to an exhibition space dedicated to the S.Pellegrino Young Chef Academy; the exclusive installation amazed all the guests with a sensational play of perspectives and a combination of physical and digital elements. Within the installation, a series of cooking utensils and objects were suspended in mid-air, as if to represent a cloud. The cloud of objects, viewed from a particular perspective duly pointed out to the visitors, formed the Italian word “talento”, thus highlighting the value which, according to S.Pellegrino, symbolizes the future of gastronomy.
A series of monitors, an integral part of the installation, presented profiles, quotations and stories featuring the Mentor chefs and the Young Chef winners of the Italian finals of S.Pellegrino Young Chef Academy 2021, while highlighting the keywords Curiosity, Identity, Sharing, Connection, Innovation and Equilibrium as well as Vision, Care, Culture and Sustainability.
The endorsements provided by the Italian mentor chefs Carlo Cracco, Antonia Klugmann, Riccardo Camanini, Cristina Bowerman, Davide Oldani, Anthony Genovese were followed by those of the four Young Chefs, winners of the Italy and South East Europe finals of S.Pellegrino Young Chef Academy, namely Alessandro Bergamo (Winner of the S.Pellegrino Young Chef Award 2019); Antonio Romano (Vincitore Fine Dining Lovers Food for Thought Award 2019; Tommaso Tonioni (Winner of the Acqua Panna Award for Connection in Gastronomy 2019) and Davide Marzullo (Winner of the S.Pellegrino Award for Social Responsibility 2019).
An authentic exhibition trail dedicated to talent and the future of gastronomy, with a view to promoting an exchange of ideas and on-going training, in line with the values of the ambitious project of S.Pellegrino Young Chef Academy, conceived to be a digital and inclusive community of dialogue and international talent.
