For many years, S.Pellegrino has supported the world-renowned Bocuse d’Or competition - the "Gastronomic Olympics". The water choice for the finest tables around the world, S.Pellegrino was Silver Sponsor of the Bocuse d'Or Europe 2020 final held in Tallinn, Estonia on October 15-16.
Norway took again the gold medal at this year's event, as chef Christian André Pettersen assisted by commis Even Strandbraathen Sorum impressed the jury with his outstanding skill and creativity in celebrating Estonia's culinary heritage. Also on the podium were Denmark and Sweden. Accompanying them to the worldwide final in Lyon, France on June 1-2, 2021 will be Iceland, Finland, France, Estonia, Switzerland, Hungary and Italy.
THE JURY
The Honorary Jury was led by award-winning US Chef Philip Tessier and also featured Dimitri Demjanov and honorary president Clare Smyth. They were supported by a tasting jury of 16 top European chefs, including Italy's Carlo Cracco, and a 4-person kitchen jury.
THE CHALLENGE – ESTONIAN SPECIALITIES
16 teams, each comprising chef, commis and coach, had precisely 5 hours and 35 minutes to perform two separate tests highlighting emblematic products of the host country. First, a tray composition with Estonian quail; and second, a plated dish featuring catfish. Each candidate was required to celebrate these products while expressing their own culinary traditions.
THE ROAD TO LYON 2021
The 10 teams will join the qualifiers from the Americas, Asia-Pacific and Africa regions, making up a total of 24 candidates at the grand finale in Lyon in 2021.
